These stuffed sweet potatoes are the ultimate game day food, combining creamy roasted sweet potatoes with spicy, tangy buffalo chicken and melted cheese. They’re easy to make, perfect for crowds, and deliver a balanced sweet-and-spicy flavor that everyone loves.

  • 4 medium sweet potatoes
  • 3 cups cooked chicken, shredded
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon white vinegar
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 34 green onions, sliced
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub sweet potatoes clean and pat dry. Poke each one 4-5 times with a fork. Rub with olive oil and a generous pinch of salt. Place directly on oven rack or on a lined baking sheet. Bake for 40-50 minutes until soft and skin is slightly wrinkled and crispy.
  3. While potatoes bake, make the buffalo chicken: In a small saucepan over low heat, melt the butter. Add buffalo hot sauce and white vinegar, stir until combined. In a mixing bowl, place shredded chicken. Pour warm sauce over chicken and toss well to coat. Let sit to absorb flavor.
  4. When sweet potatoes are done, let cool for 5 minutes. Slice each open lengthwise. Use a fork to gently fluff the inside of each potato.
  5. Divide buffalo chicken evenly among the four potatoes. Top each with shredded cheddar cheese and crumbled blue cheese if using.
  6. Return stuffed potatoes to the oven and bake for another 5-7 minutes until cheese is melted and bubbly. For golden cheese, broil for 1-2 minutes, watching closely.
  7. Garnish with sliced green onions. Serve immediately.

Notes

For extra crispy skin, brush potatoes with more oil and broil for 2 minutes before stuffing. Poke potatoes to prevent exploding. Use rotisserie chicken for convenience. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven at 350°F for 10-12 minutes.
