  • 3 large ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup sour cream (or plain Greek yogurt), room temperature
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 tablespoons unsalted butter (for glaze)
  • 1 cup powdered sugar, sifted
  • 2 to 3 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract (optional, for glaze)

Instructions

  1. Brown the butter: Place 1/2 cup butter in a light-colored saucepan over medium heat. Stir occasionally until it melts, foams, and turns golden brown with specks at the bottom (about 5-7 minutes). Remove from heat and pour into a heatproof bowl to cool for 10-15 minutes.
  2. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  3. In a large bowl, mash the bananas with a fork until some small lumps remain. Measure 1 1/2 cups.
  4. Add the cooled brown butter, granulated sugar, and brown sugar to the bananas. Whisk until smooth. Add eggs, vanilla, and sour cream; whisk until combined and glossy.
  5. In a separate medium bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  6. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are okay). Do not overmix.
  7. Pour batter into prepared loaf pan and spread evenly. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  8. Let bread cool in pan for 10 minutes, then lift out using parchment and transfer to a cooling rack. Cool completely before glazing.
  9. Make the glaze: While bread cools, brown remaining 2 tablespoons butter in the same saucepan. Let cool 5 minutes. In a small bowl, whisk together browned butter, sifted powdered sugar, vanilla, and 2 tablespoons milk. Add more milk a teaspoon at a time until pourable. Drizzle over cooled bread.

Don’t rush the brown butter; it can burn quickly. Use room temperature ingredients to prevent the butter from seizing. Measure flour by spooning and leveling for accuracy. Let bread cool completely before glazing for best presentation. The brown butter flavor deepens after a day.
