This funfetti birthday cake is impossibly moist with a tender crumb and vanilla-forward sweetness. Made with simple ingredients and rainbow jimmies, it’s the perfect celebration cake for any occasion.

  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (240ml) whole milk, room temperature
  • ½ cup (100g) rainbow jimmies sprinkles
  • 1 cup (2 sticks / 226g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar
  • 34 tablespoons (45-60ml) heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • A pinch of salt (for frosting)
  • ¼ cup (50g) extra sprinkles for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, and grease the parchment.
  2. In a large bowl, beat softened butter and granulated sugar on medium speed for 3-4 minutes until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Add vanilla extract and beat until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. With mixer on low, add one-third of the flour mixture to the butter mixture, mixing until just combined. Add half of the milk, mixing until just combined. Repeat with another third of flour, remaining milk, and final third of flour. Do not overmix.
  6. Gently fold in rainbow jimmies with a rubber spatula until evenly distributed.
  7. Divide batter evenly between prepared pans. Bake for 25-30 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  8. Cool cakes in pans on a wire rack for 10 minutes, then invert onto rack, peel off parchment, and cool completely.
  9. For frosting: Beat softened butter on medium speed until smooth. Gradually add powdered sugar, one cup at a time, beating on low. Add vanilla and salt. Add heavy cream one tablespoon at a time, beating on medium-high until light and fluffy.
  10. Place one cooled cake layer on serving plate. Spread about ¾ cup frosting on top. Place second layer on top. Apply a thin crumb coat of frosting all over the cake. Refrigerate for 15 minutes.
  11. Apply remaining frosting generously. Press extra sprinkles into the sides of the cake and sprinkle a few on top. Slice and serve.

Notes

Use jimmies (rod-shaped sprinkles), not nonpareils, to prevent color bleeding. Room temperature ingredients are crucial for proper emulsification. Do not overmix the batter. Let cakes cool completely before frosting. A crumb coat helps achieve a clean finish.
