Best Grilled Peach & Bourbon Caramel Sundae Bar

  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1 cup brown sugar, packed
  • 6 tablespoons unsalted butter, cut into pieces
  • ½ cup heavy cream
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • Vanilla bean ice cream (for serving)
  • Toasted pecans or candied walnuts (optional)
  • Whipped cream (optional)
  • Fresh mint leaves (optional)
  • Crushed graham crackers or shortbread cookies (optional)
  • Chocolate shavings or mini chocolate chips (optional)

Instructions

  1. Preheat your grill to medium-high heat (400°F to 450°F). Clean and oil the grates.
  2. Wash and pat dry the peaches. Cut each peach in half along the natural seam, twist to separate, and remove the pit. Leave the skin on.
  3. In a small bowl, mix the melted butter and 1 tablespoon brown sugar. Brush the cut side of each peach half generously with the mixture.
  4. Place the peaches cut-side down on the hot grill. Cook for 3-4 minutes without moving, then flip and grill for another 2-3 minutes on the skin side. Remove to a plate and let cool slightly.
  5. While the peaches are grilling, make the caramel. In a medium saucepan over medium heat, combine 1 cup packed brown sugar and 6 tablespoons butter. Stir constantly until melted and bubbling, about 3 minutes.
  6. Slowly pour in the heavy cream while whisking continuously. Continue whisking until smooth and glossy, about 2 minutes. Reduce heat to low.
  7. Remove the saucepan from heat. Stir in the bourbon, vanilla extract, and sea salt. Let cool for 5 minutes before serving.
  8. Set up a sundae bar: arrange grilled peach halves on a platter, pour caramel into a small pitcher or bowl, and place ice cream and all toppings in individual bowls.
  9. For each sundae, place a scoop of ice cream in a bowl, top with a grilled peach half, drizzle with bourbon caramel, and add desired toppings. Serve immediately.

Notes

For a non-alcoholic version, substitute bourbon with 2 tablespoons apple cider or orange juice mixed with ½ teaspoon vanilla extract. Peaches should be ripe but firm to hold their shape on the grill. Caramel can be made up to 2 weeks ahead and reheated gently.
