These Healthy Pumpkin Oat Breakfast Bars are soft, chewy, and perfectly spiced for fall. Made with simple ingredients like oats, pumpkin puree, and a touch of maple syrup, they’re a wholesome breakfast or snack that tastes indulgent but isn’t.

  • 2 cups rolled oats (not quick oats)
  • 1 cup pumpkin puree (100% pure, not pie filling)
  • 2 large eggs (room temperature preferred)
  • ¼ cup pure maple syrup
  • ¼ cup unsweetened applesauce
  • 2 tablespoons coconut oil, melted (or neutral oil)
  • 1 teaspoon vanilla extract (pure)
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Optional mix-ins: chocolate chips, chopped pecans, dried cranberries, or unsweetened shredded coconut (up to ⅓ cup total)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides. Lightly spray exposed edges with nonstick spray if desired.
  2. In a large bowl, whisk together the pumpkin puree, eggs, maple syrup, applesauce, melted coconut oil, and vanilla extract until smooth and uniform.
  3. Sprinkle the pumpkin pie spice, cinnamon, baking powder, and salt over the wet mixture. Whisk until fully incorporated.
  4. Add the rolled oats to the bowl. Use a rubber spatula to fold them in gently until every oat is coated and no dry patches remain. If using mix-ins, fold them in now.
  5. Pour the batter into the prepared pan. Use the spatula to spread it evenly, pushing into the corners and leveling the surface.
  6. Bake for 25-30 minutes, until the edges are golden brown and the center feels firm to the touch. A toothpick inserted into the middle should come out clean or with a few moist crumbs.
  7. Cool completely in the pan on a wire rack for at least 30 minutes. Then use the parchment overhang to lift the block out and transfer to a cutting board.
  8. Slice into 9 or 12 squares using a sharp knife. Wipe the knife clean between cuts for neater edges.

Notes

Let the batter rest for 5 minutes before baking to help the bars hold together. Don’t overmix the batter once oats are added. For cleaner slices, run your knife under hot water before cutting. These bars taste even better on day two as the spices meld. If using fresh pumpkin puree, drain it well to avoid soggy bars.
