A no-bake, 20-minute berry trifle with layers of pound cake, vanilla cream, and fresh strawberries, blueberries, and raspberries. Perfect for patriotic holidays and summer gatherings.

  • 1 pound cake (store-bought or homemade), cut into 1-inch cubes
  • 2 cups fresh strawberries, hulled and sliced
  • 1 ½ cups fresh blueberries
  • 1 ½ cups fresh raspberries
  • 2 cups cold whole milk
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the instant vanilla pudding mix and 2 cups of cold whole milk for about 2 minutes until it starts to thicken. Set aside to set up.
  2. In a large bowl, combine cold heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric hand mixer on medium-high speed until soft peaks form, about 3-4 minutes.
  3. Fold about a third of the whipped cream into the set pudding to lighten it. Then gently fold the remaining whipped cream into the pudding mixture until it looks like a soft, creamy cloud.
  4. Wash and dry all berries. Hull and slice strawberries into ¼-inch thick pieces. Pat berries dry with a paper towel.
  5. Slice the pound cake into 1-inch cubes.
  6. Place a single layer of pound cake cubes at the bottom of a trifle dish. Press them down gently to form an even base.
  7. Spoon about a third of the cream mixture over the cake cubes and spread evenly to the edges.
  8. Scatter a layer of strawberries, blueberries, and raspberries over the cream.
  9. Repeat layers: cake cubes, cream mixture, berries, until all ingredients are used, ending with a final layer of cream on top.
  10. Arrange remaining berries on top in a pattern (e.g., stripes of red, white, and blue).
  11. Cover with plastic wrap and refrigerate for at least 2 hours before serving. Overnight is even better.

Notes

Don’t skip the chilling step—it allows the cake to soften and flavors to meld. Use a serrated knife for clean cake cubes. Press a few berries against the glass for visual appeal. Make extra whipped cream for serving.
