A festive and delicious Halloween appetizer featuring layers of seasoned beef, creamy cheese, and a sour cream spiderweb design. This easy taco dip looks impressive but comes together in just 15 minutes of active work.

  • 1 lb ground beef (80/20)
  • 1 packet taco seasoning
  • ⅓ cup water
  • 1 can (15 oz) refried beans
  • 8 oz cream cheese, softened to room temperature
  • 2 cups shredded Mexican blend cheese
  • ½ cup sour cream (for the cheesy layer)
  • ½ cup sour cream (for the spiderweb)
  • 23 black olives, sliced
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • ¼ cup sliced green onions
  • ½ cup pickled jalapeños
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 375°F. Take the cream cheese out of the fridge to soften.
  2. Cook the ground beef in a skillet over medium-high heat until browned, about 6-8 minutes. Drain excess fat. Add taco seasoning and ⅓ cup water, stir, and simmer for 2-3 minutes until thickened. Set aside.
  3. In a small bowl, mix the softened cream cheese with the refried beans until smooth. Spread this mixture evenly across the bottom of a 9-inch pie dish.
  4. Spoon the seasoned ground beef over the refried bean mixture and spread gently.
  5. Sprinkle the shredded Mexican blend cheese over the beef, covering it completely.
  6. Bake for 15 minutes until the cheese is melted and bubbly. Optionally, broil for 1-2 minutes for browning.
  7. Let the dip cool for 3-4 minutes. Fill a squeeze bottle or zip-top bag with ½ cup sour cream. Pipe 4-5 concentric circles starting from the center. Use a toothpick to drag from the center outward through all circles, creating a web effect. Wipe the toothpick clean between drags.
  8. Place black olive slices in the center to form a spider body and legs.
  9. Sprinkle shredded lettuce, diced tomato, green onions, jalapeños, and cilantro around the edges. Serve immediately with tortilla chips.

Notes

Let the dip cool for 3-4 minutes before piping the sour cream web to prevent melting. Use room temperature cream cheese for smooth blending. For make-ahead, assemble without the sour cream web and toppings, refrigerate, and add 5-7 minutes to bake time. The dip tastes even better the next day.
