  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • 1 bay leaf

Instructions

  1. Brown the Sausage: Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the sliced smoked sausage in a single layer (work in two batches if needed). Cook without stirring for 3-4 minutes until the bottoms are deeply browned. Flip and cook for another 2-3 minutes. Use a slotted spoon to transfer the sausage to a plate and set aside. Do not wipe out the pot.
  2. Sauté the Aromatics: Reduce the heat to medium. Add the diced onion to the pot with the rendered fat. Cook for 5-6 minutes, stirring occasionally, until the onion is soft and translucent. Scrape the bottom of the pot as you stir. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Bloom the Spice: Add the smoked paprika to the pot. Stir constantly for 30 seconds. Be careful not to burn it.
  4. Build the Soup Base: Pour in the chicken broth and use a wooden spoon to scrape up any remaining browned bits from the bottom of the pot. Add the diced potatoes and the bay leaf. Bring the soup to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the potatoes are fork-tender.

Notes

For a thicker soup, mash about a cup of the cooked potatoes against the side of the pot with a fork before adding the cream. Soup tastes even better the next day. To prevent cream from curdling, ensure the soup is not boiling when adding the cream and stir gradually.
