Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up, until no longer pink (6-8 minutes). Drain excess grease, leaving about 1 tablespoon for flavor.
  2. Add diced onion and minced garlic to the skillet. Cook for 2-3 minutes until onion is translucent and fragrant.
  3. Transfer the beef mixture to a 5-6 quart slow cooker.
  4. Add diced potatoes and beef broth. Stir to combine, ensuring potatoes are mostly submerged.
  5. Season with salt, pepper, smoked paprika, and mustard powder (if using). Stir well.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until potatoes are fork-tender.
  7. Add cubed cream cheese and stir gently until completely melted (2-3 minutes).
  8. Gradually add shredded cheddar cheese, stirring after each addition, until melted and smooth.
