This creamy crockpot jalapeño popper dip is everything you want in a party appetizer: easy, indulgent, and impossible to stop eating. Five ingredients, minimal effort, and the slow cooker handles all the work.

  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese, divided
  • 46 fresh jalapeños, diced
  • 6 slices bacon, cooked and crumbled

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain. Once cool, crumble into small pieces. Set aside.
  2. Slice each jalapeño in half lengthwise. For a milder dip, scrape out seeds and membranes. Dice into small, uniform pieces (about 1/4-inch).
  3. If cream cheese is not softened, cut into cubes and microwave in 15-second bursts until just softened.
  4. Add softened cream cheese, sour cream, and 1 1/2 cups of shredded cheddar to the slow cooker. Stir until well combined.
  5. Stir in diced jalapeños and about three-quarters of the crumbled bacon. Reserve the rest for garnish.
  6. Cover and cook on low for 2 hours. After 1 hour, stir to help everything melt together smoothly.
  7. After 1.5 hours, sprinkle remaining 1/2 cup of cheddar cheese over the top. Cover and cook for the final 30 minutes.
  8. Sprinkle reserved bacon crumbles on top. Add optional garnishes like chopped green onions or cilantro. Serve warm directly from the slow cooker on the ‘warm’ setting.

Notes

For a milder dip, remove seeds and membranes from jalapeños. For extra heat, leave seeds in or add a serrano pepper. Softening cream cheese first prevents lumps. Cooking on low is essential to avoid grainy dairy. Stir halfway through to prevent skin from forming. Keep dip on ‘warm’ setting for serving. Leftovers keep in fridge for up to 4 days and freeze for up to 3 months.
