  • ½ cup (120ml) milk (any kind)
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth.
  2. Add the peanut butter and mash together with the banana until well combined.
  3. Pour in the milk, Greek yogurt, maple syrup (if using), and vanilla extract. Stir until the peanut butter-banana mixture is fully incorporated.
  4. Add the rolled oats, chia seeds, and a pinch of salt. Stir well until everything is evenly combined, ensuring no dry patches remain.
  5. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats from the bottom up. If too thick, add a tablespoon or two of milk to loosen.
  7. Top with sliced banana, extra peanut butter, chopped peanuts, or dark chocolate chips if desired. Serve cold or at room temperature.

Notes

For best texture, use rolled oats (not quick oats). Mash banana with peanut butter first for even flavor distribution. Oats keep for up to 4 days in the fridge. For warm oats, microwave 45-60 seconds. For vegan version, use plant-based milk and yogurt, and replace honey with maple syrup. For gluten-free, use certified gluten-free oats.
