  • 1 tablespoon (12g) chia seeds (optional)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla or chocolate protein powder
  • Pinch of sea salt
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, extra peanut butter, fresh berries, cinnamon

Instructions

  1. Prep your jars or containers: Make sure they are clean and dry.
  2. Mix the dry ingredients: In a medium bowl, combine 1 cup rolled oats, 1 tablespoon chia seeds (if using), and a pinch of sea salt. Stir together.
  3. Whisk the wet ingredients separately: In a small bowl, whisk together 1 cup milk, 1/4 cup Greek yogurt, 1 teaspoon vanilla extract, and 1-2 tablespoons maple syrup. If using protein powder, add it now and whisk until smooth.
  4. Combine wet and dry: Pour the wet mixture into the bowl with the oats. Add 2 tablespoons creamy peanut butter. Stir until fully combined, breaking up any peanut butter globs.
  5. Divide into jars: Pour the oat mixture evenly into your prepared jars, leaving about an inch of space at the top.
  6. Seal and refrigerate: Screw the lids on tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. Add toppings in the morning: Stir the oats, add a splash of milk if too thick, then top with desired toppings. Eat cold or microwave for 45-60 seconds if preferred.

Notes
