  • 1 large ripe banana, mashed (about ½ cup or 120g)
  • ¼ cup (64g) creamy peanut butter
  • 1 cup (240ml) milk of choice (whole, oat, almond, or 2%)
  • 1 tablespoon (12g) chia seeds (optional)
  • 12 teaspoons maple syrup or honey (optional)
  • Pinch of salt
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: Peel the ripe banana and mash it thoroughly in a small bowl with a fork until mostly smooth with a few small lumps.
  2. Combine wet ingredients: In a mason jar or container, add the mashed banana, peanut butter, and milk. Stir vigorously with a spoon or small whisk until the peanut butter is fully incorporated (about 30 seconds).
  3. Add dry ingredients: Add the rolled oats, chia seeds (if using), salt, and vanilla (if using). Stir until the oats are fully coated and no dry patches remain. The mixture will be liquidy.
  4. Sweeten to taste: Taste the mixture and stir in maple syrup or honey if desired. Remember the banana will continue to sweeten overnight.
  5. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours is ideal). Do not leave for more than 24 hours.
  6. Serve and enjoy: In the morning, stir the oats. They should be thick and creamy. If too thick, add a splash of milk. Add toppings like sliced banana, extra peanut butter, cinnamon, or dark chocolate chips. Serve cold or at room temperature.

Notes

For best texture, use old-fashioned rolled oats, not quick oats. The banana should be very ripe with brown spots for maximum sweetness. If using chia seeds, reduce milk by 2 tablespoons to avoid watery oats. Store in the refrigerator for up to 5 days; texture is best within the first 3 days. Do not freeze. For a high-protein boost, add a scoop of protein powder and increase milk by 2-3 tablespoons.
