Ingredients

Scale
  • 4 boneless pork chops (about 1 inch thick)
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 cup all-purpose flour (or almond flour for gluten-free)
  • Olive oil spray (or avocado oil spray)
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 teaspoon lemon zest (optional)

Instructions

  1. Make the Garlic Herb Butter: In a small bowl, combine 4 tablespoons softened unsalted butter, 2 minced garlic cloves, 2 tablespoons finely chopped fresh parsley, 1 tablespoon finely chopped fresh chives, and 1/2 teaspoon lemon zest (if using). Mix with a fork until smooth. Scrape onto plastic wrap or parchment paper, shape into a log, twist ends to seal, and refrigerate for at least 15 minutes.
  2. Prep the Pork Chops: Pat 4 boneless pork chops dry with paper towels. Season both sides generously with salt and black pepper.
  3. Make the Seasoned Coating: In a shallow dish, whisk together 1/4 cup all-purpose flour, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, and 1/2 teaspoon dried thyme.
  4. Coat the Chops: Dredge each pork chop in the flour mixture, pressing gently to adhere. Shake off excess. Place coated chops on a plate.
  5. Preheat the Air Fryer: Preheat air fryer to 400°F (200°C) for 3-5 minutes.
  6. Air Fry the Pork Chops: Lightly spray both sides of coated chops with olive oil spray. Place in a single layer in the air fryer basket (do not overcrowd). Air fry at 400°F for 8 minutes. Flip carefully with tongs, then air fry for another 4-6 minutes, or until internal temperature reaches 145°F (63°C).
  7. Rest and Top with Butter: Remove chops from air fryer and let rest for 3-5 minutes. While still hot, place a generous pat of chilled garlic herb butter on each chop. Let it melt.
  8. Serve Immediately: Serve hot, spooning any extra melted butter over the top.

Notes

For thinner chops (less than 3/4 inch), reduce total cooking time by 2-3 minutes. For thicker chops (over 1.5 inches), add 2-3 minutes. Always rely on a meat thermometer for accuracy. Resting the chops after cooking is crucial to retain juices. The compound butter can be made up to a week ahead and stored in the refrigerator, or frozen for up to 3 months.
