  • 1 cup (240ml) milk (dairy or plant-based)
  • 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
  • 1/4 cup (60g) unsalted butter (or vegan butter)
  • Optional: ranch or blue cheese dressing for dipping
  • Optional: chopped fresh parsley or green onions for garnish

Instructions

  1. Preheat oven to 450°F (230°C). Line a large baking sheet with parchment paper. If using a wire rack, place it on the baking sheet and spray with non-stick cooking spray.
  2. Remove leaves and core from cauliflower. Cut into bite-sized florets (about 1 to 1.5 inches). Rinse and pat very dry with a clean kitchen towel.
  3. Spread dry florets in a single layer on the prepared baking sheet. Bake for 10 minutes. Remove from oven and let cool for 5 minutes.
  4. In a large bowl, whisk together flour, garlic powder, smoked paprika, salt, and black pepper. Slowly pour in milk while whisking continuously until smooth and thick (slightly thicker than pancake batter).
  5. Add par-baked cauliflower florets to the batter. Use tongs to gently toss until fully coated. Let excess batter drip off, then place florets back on the baking sheet or wire rack in a single layer with space between each.
  6. Bake for 20 minutes, flipping halfway through, until golden and starting to crisp.
  7. While cauliflower bakes, melt butter in a small saucepan over low heat or in a microwave-safe bowl. Stir in hot sauce until well combined. Keep warm.
