  • 1 can (16.3 oz / 463g) refrigerated biscuit dough (Pillsbury Grands! flaky layers recommended)
  • 1½ cups (about 8 oz / 225g) cooked shredded chicken (rotisserie or leftover grilled chicken)
  • 4 oz (113g) cream cheese, softened
  • ⅓ cup (80ml) Buffalo sauce (Frank’s RedHot Original recommended)
  • ½ cup (60g) shredded cheddar cheese (sharp cheddar preferred)
  • 1 tablespoon dry ranch dressing mix
  • 23 green onions, thinly sliced
  • 2 tablespoons (28g) melted butter
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Make the filling: In a medium bowl, combine 4 oz softened cream cheese, ⅓ cup Buffalo sauce, 1½ cups shredded chicken, ½ cup shredded cheddar, 1 tablespoon ranch dressing mix, and half the sliced green onions. Mix until well combined.
  3. Prepare the biscuit dough: Open the can of refrigerated biscuit dough. Separate the biscuits (you should have 8). Cut each biscuit in half horizontally to make 16 thin rounds.
  4. Stuff the bites: Take one biscuit round and gently stretch it slightly. Place about 1 tablespoon of filling in the center. Fold the edges up and over the filling, pinching the seams to seal. Roll gently into a ball shape. Repeat with remaining dough and filling.
  5. Arrange on the baking sheet: Place the stuffed bites seam-side down on the prepared baking sheet, leaving about 2 inches of space between each.
  6. Brush with garlic butter: In a small bowl, melt 2 tablespoons butter. Stir in ½ teaspoon garlic powder. Brush the tops of each bite with the garlic butter.
  7. Bake for 12-15 minutes, or until tops are deep golden brown and filling is bubbly. Let cool on the baking sheet for 5 minutes before serving.
  8. Garnish and serve: Sprinkle remaining sliced green onions over the top. Serve warm with extra Buffalo sauce or ranch dressing for dipping.

Notes

For best results, use full-fat cream cheese and freshly grated cheddar. Chilling the stuffed bites for 10 minutes before baking helps prevent filling from leaking. Can be assembled up to 24 hours in advance and refrigerated. Unbaked bites can be frozen for up to 3 months.
