Instructions

  1. Brew your coffee and let it cool slightly. If using hot coffee, let it sit for a few minutes. If using cold brew, you are ready to go. Pour about 8 ounces of coffee into your tall glass filled with ice. Leave about two inches of space at the top for the foam.
  2. Make the cold foam base. In a small bowl or jar, combine 1/4 cup of half and half, 1 tablespoon of pumpkin puree, 1 tablespoon of vanilla syrup or maple syrup, 1/4 teaspoon of pumpkin pie spice, and a tiny pinch of salt. Stir it with a spoon first to break up the pumpkin puree.
  3. Froth the mixture. Use your handheld frother or immersion blender to whip the mixture for about 20 to 30 seconds. You are looking for it to double in volume and become thick enough to hold a ribbon on top.
  4. Check the texture. The foam should be light and airy, but stable. It should sit on top of the coffee without immediately sinking.
  5. Pour the foam over the coffee. Use a spoon to gently layer the foam on top of the iced coffee. Do not stir it in.
