  • 1/2 medium red onion, thinly sliced
  • 1 cup (240g) sour cream (full-fat recommended)
  • 1/4 cup fresh dill, finely chopped
  • 2 tablespoons white wine vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt (plus more for salting cucumbers)
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Wash cucumbers and slice into thin rounds, about 1/8-inch thick. Place in a large mixing bowl.
  2. Sprinkle 1 teaspoon of salt over the sliced cucumbers and toss well to coat. Let sit at room temperature for 30 minutes to draw out moisture.
  3. After 30 minutes, transfer cucumbers to a colander and rinse quickly under cold water to remove excess salt. Shake off water, then pat dry thoroughly with a clean kitchen towel or paper towels.
  4. While cucumbers drain, thinly slice red onion. For a milder flavor, soak onion slices in ice water for 10 minutes, then drain and pat dry.
  5. In a small bowl, whisk together sour cream, white wine vinegar, sugar, remaining 1/2 teaspoon salt, and black pepper. Taste and adjust seasoning. Fold in fresh chopped dill.
  6. Place dried cucumbers and softened onions in a clean, dry mixing bowl. Pour dressing over top and gently fold until every slice is coated.
  7. Cover bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
  8. Before serving, stir salad, taste, and adjust seasoning if needed. Garnish with extra fresh dill if desired.

Notes

The salad will look a little dry when first mixed; it will loosen as it chills. Best eaten within 24 hours. Do not reheat. For a dairy-free version, use plant-based sour cream or thick coconut yogurt.
