Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, lemon zest and juice, minced garlic, and chopped rosemary. Stir well.
  3. Pat salmon fillets dry with paper towels. Place skin-side down and spoon the lemon-rosemary mixture over each piece. Let sit at room temperature for 10 minutes.
  4. Line a rimmed baking sheet with parchment paper or lightly oil it. Arrange optional vegetables around the edges and drizzle with some marinade.
  5. Place salmon fillets skin-side down on the sheet pan, spaced apart.
  6. Roast in the oven for 12-15 minutes, depending on thickness, until the flesh flakes easily but remains moist.
  7. Optional: Broil for 1-2 minutes at the end for extra crispy skin, watching carefully to avoid burning.
  8. Remove from oven and let rest for 2-3 minutes to redistribute juices.
