  • 1216 frozen fully cooked meatballs, thawed
  • 45 string cheese sticks, cut into 1-inch pieces
  • 1 cup large black olives (pitted), drained
  • 4 ounces fresh mozzarella pearls
  • Wooden cocktail skewers (about 6 inches long)
  • 8 ounces sharp cheddar cheese, cut into cubes
  • 4 ounces smoked gouda, sliced thin
  • 8 ounces salami (genoa), sliced thin
  • 4 ounces pepperoni, sliced thin
  • 1 cup red seedless grapes, washed and dried
  • 1 cup green seedless grapes, washed and dried
  • 1 cup rosemary crackers or buttery round crackers
  • 1 cup pretzel sticks
  • Edible candy eyeballs (optional)
  • Black figs or dried black mission figs (a few, halved)
  • Fresh rosemary sprigs
  • Pumpkin seeds (a small bowl)

Instructions

  1. Thaw the meatballs (if frozen) by placing them in the fridge overnight or microwaving on defrost for 2-3 minutes. Pat dry with paper towels.
  2. Cut the cheddar into bite-sized cubes (about 1 inch square). Slice the smoked gouda into thin triangles or rectangles. Cut the string cheese into 1-inch pieces.
  3. Wash and thoroughly dry the grapes. Halve the black figs if using.
  4. Assemble the spooky skewers: Thread one piece of string cheese, one black olive, one meatball, and one mozzarella pearl onto each wooden skewer. Repeat until all ingredients are used (about 12-16 skewers).
  5. Place small bowls or ramekins on the board for olives, pumpkin seeds, or dips.
  6. Scatter the cheddar cubes and smoked gouda slices around the board, grouping similar cheeses together.
  7. Fold the salami and pepperoni slices into loose piles or waves and place them near the cheeses.
  8. Arrange the crackers and pretzel sticks in small clusters around the board.
  9. Scatter the red and green grapes and halved figs in the empty spaces.
  10. Place the assembled skewers on the board, pointing in different directions. Tuck rosemary sprigs between the skewers.
  11. If using candy eyeballs, place a few on grapes or cheese cubes. Sprinkle pumpkin seeds in any bare spots.
  12. Step back and fill any obvious gaps with extra crackers or grapes.

Notes

Soak bamboo skewers in water for 10 minutes before assembling to prevent splintering. Assemble skewers within an hour of serving for best texture. Let cheese sit at room temperature for 15 minutes before cutting for cleaner cubes. For a vegetarian version, swap meatballs for roasted chickpeas or pan-fried tofu cubes.
