  • 8 oz cream cheese, softened to room temperature
  • 2 tablespoons milk (any kind)
  • 8 slices deli ham (thinly sliced)
  • 8 slices cheddar cheese (or your favorite cheese)
  • ¼ cup finely chopped green onions or chives (optional)
  • ¼ cup finely shredded lettuce or spinach (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 20 minutes before starting, or microwave for 10-15 seconds. Add 2 tablespoons milk and mix until smooth and spreadable. Stir in green onions or seasonings if using.
  2. Prep tortillas: Lay tortillas flat on cutting board. If stiff, microwave for 10 seconds between damp paper towels to make pliable.
  3. Spread cream cheese: Using a spatula or butter knife, spread a thin, even layer of cream cheese mixture over entire surface of each tortilla, going to edges. Use about 2-3 tablespoons per tortilla.
  4. Layer ham: Place 2 slices of ham evenly over cream cheese, overlapping slightly to cover surface.
  5. Add cheese: Lay 2 slices of cheddar cheese over ham, overlapping slightly. Add optional lettuce or spinach on top, patted dry.
  6. Roll tightly: Starting from one edge, roll tortilla as tightly as possible without tearing, keeping filling tucked in. Press down gently to seal edge.
  7. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap or parchment paper, twisting ends like a candy wrapper. Refrigerate for at least 30 minutes.
  8. Slice into pinwheels: Unwrap rolls and place on cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick rounds using a gentle sawing motion. You should get 6-8 pinwheels per tortilla.
  9. Secure with toothpicks (optional): Insert a toothpick through center of each pinwheel to prevent unrolling, especially for lunchboxes.
  10. Serve or pack: Arrange pinwheels in lunchbox or serving platter. Serve immediately or refrigerate for up to 3 days.

Notes

Use room temperature cream cheese for easy spreading. Chill rolls for at least 30 minutes before slicing for clean cuts. For best results, use thin slices of ham and cheese. Tortillas can be warmed for 10 seconds if stiff. Store in airtight container in fridge for up to 3 days. Do not freeze.
