  • 12 tablespoons maple syrup (adjust to taste)
  • ½ teaspoon pumpkin pie spice (plus more for garnish)
  • ¼ teaspoon vanilla extract
  • Pinch of black pepper
  • Optional: 1 shot of espresso or ¼ cup strong brewed coffee

Instructions

  1. Combine the base: In a small saucepan, add the oat milk, pumpkin puree, and maple syrup. Whisk vigorously to combine, ensuring no lumps.
  2. Heat and whisk: Place the saucepan over medium heat. Whisk constantly until the milk is hot but not boiling (small bubbles around the edges, about 150-160°F).
  3. Steep the chai: Remove the pan from heat. Add the chai tea bags, fully submerged. Cover and steep for 4-5 minutes (3 minutes for milder flavor).
  4. Add the extras: Remove tea bags, gently squeezing them over the pan. Stir in vanilla extract and a pinch of black pepper. If using coffee or espresso, stir it in now.
  5. Froth (optional): Use a handheld frother in the saucepan for 15-20 seconds, or pour the latte into a jar, seal, shake for 30 seconds, then pour back into the pan.
  6. Pour and garnish: Pour the latte into a mug. Sprinkle pumpkin pie spice on top. Optionally, add coconut whipped cream or a drizzle of maple syrup.

Notes

Do not boil the oat milk; it can separate. Whisk pumpkin into cold milk first to avoid lumps. Steep tea with the lid on for best flavor. Taste before sweetening; oat milk is naturally sweet. Leftovers can be stored in the fridge for up to 2 days; reheat gently on the stovetop.
