Easy Mediterranean Chickpea and Feta Stuffed Mini Peppers

A quick and easy Mediterranean appetizer featuring crunchy mini sweet peppers stuffed with a creamy, tangy chickpea and feta filling, perfect for busy weeknights or entertaining guests.

  • About 20 mini sweet peppers
  • 1 can (15 oz / 425 g) canned chickpeas, drained and rinsed
  • 4 oz (115 g) feta cheese, crumbled
  • 2 tbsp Greek yogurt
  • 2 tbsp fresh parsley, chopped
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 small clove garlic, minced
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or red pepper flakes
  • Optional: chopped kalamata olives

Instructions

  1. Rinse the mini peppers under cold water, then slice each in half lengthwise, removing the seeds and membranes. Set them cut side up on a serving platter.
  2. In a mixing bowl, gently mash the drained chickpeas with a fork or potato masher until mostly smooth but still a bit chunky.
  3. Crumble the feta cheese into the mashed chickpeas and stir in the Greek yogurt until combined.
  4. Add the minced garlic, chopped parsley, lemon zest, lemon juice, and olive oil. Season with salt and freshly ground black pepper to taste. Stir well and adjust seasoning if needed.
  5. Using a small spoon or cookie scoop, fill each mini pepper half generously with the chickpea and feta mixture. Press lightly to pack the filling but do not overstuff.
  6. Serve immediately or refrigerate for 15–20 minutes to let the flavors meld and the filling firm up a bit.

Notes

Do not over-mash chickpeas to keep some texture. Remove all seeds and membranes from peppers to avoid bitterness. Adjust salt if feta is very salty. Serve chilled or at room temperature. Optional toppings include toasted pine nuts or chopped walnuts. For vegan version, substitute feta with plant-based cheese or omit and increase herbs and lemon juice.
