  • 1 tbsp olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 tbsp chili powder (mild blend preferred)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano (Mexican oregano if available)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1 can (14.5 oz) diced tomatoes, undrained (fire-roasted recommended)
  • 1 can (4 oz) diced green chiles (mild or medium)
  • 1/2 cup low-sodium chicken broth (or water)
  • 1 cup frozen corn kernels (no need to thaw)
  • 1 can (15 oz) black beans, drained and rinsed
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the oil: Place your large skillet over medium-high heat and add the olive oil. Let it shimmer for about 30 seconds — you want it hot but not smoking.
  2. Cook the onion: Add the diced onion and cook for 2-3 minutes, stirring occasionally, until it becomes translucent and starts to soften.
  3. Add the garlic: Toss in the minced garlic and cook for another 30 seconds, stirring constantly. Garlic burns fast, so don’t walk away here.
  4. Brown the turkey: Add the ground turkey to the skillet. Use your wooden spoon to break it up into crumbles. Let it cook undisturbed for about 2 minutes to get a nice sear, then start stirring. Cook for 5-6 minutes total, until the turkey is no longer pink. Don’t drain the fat.
  5. Season the meat: Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using) over the turkey. Stir well to coat every bit of meat. Let it cook for 1 minute to ‘bloom’ the spices.
  6. Add the liquids and chiles: Pour in the undrained diced tomatoes, diced green chiles, and chicken broth. Stir everything together, scraping up any browned bits from the bottom of the pan.
  7. Simmer: Bring the mixture to a gentle boil, then reduce the heat to medium-low. Let it simmer uncovered for 5 minutes, stirring occasionally.
  8. Add the corn and beans: Stir in the frozen corn and drained black beans. Cook for another 3-4 minutes, until everything is heated through.
  9. Finish with lime and cilantro: Remove the skillet from the heat. Squeeze the juice of one lime over the top and sprinkle with fresh cilantro. Give it one final stir, then taste and adjust seasoning if needed.
  10. Serve immediately: Spoon the skillet mixture into bowls or onto plates. Top with your favorite taco fixings — shredded cheese, sour cream, avocado, hot sauce, etc.

Notes

For best texture, use 93% lean ground turkey. If using 99% lean, add an extra tablespoon of olive oil. Fire-roasted diced tomatoes add extra flavor. The skillet tastes even better the next day as flavors meld. To make it vegetarian, swap turkey with crumbled firm tofu or extra black beans. For a low-carb version, omit beans and corn and serve over cauliflower rice.
