  • Ice cubes
  • 1/4 cup heavy cream, cold
  • 2 tablespoons whole milk
  • 2 tablespoons pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Brew 1 cup of strong coffee and let it cool to room temperature.
  2. In a small bowl, combine 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon pumpkin pie spice, and a pinch of salt. Whisk until smooth.
  3. In a pint-sized mason jar, pour 1/4 cup cold heavy cream and 2 tablespoons whole milk.
  4. Spoon the pumpkin mixture into the jar with the cream and milk. Do not stir.
  5. Screw the lid on tight and shake vigorously for 45 seconds to 1 minute, until the mixture is thick and pourable (like melted soft serve).
  6. Fill a tall glass with ice cubes. Pour the cooled coffee over the ice, leaving about an inch of space at the top.
  7. Slowly pour the pumpkin cream foam over the back of a spoon onto the coffee to create a layer.
  8. Optional: Sprinkle with extra pumpkin pie spice.
  9. Serve immediately with a straw.

Notes

Use very cold cream for best foam. Do not overshake or it will turn into butter. Strain pumpkin puree if watery. Layer foam with a spoon to prevent sinking. Can prep pumpkin-cream mixture the night before. For dairy-free, use full-fat coconut cream and oat milk.
