  • 1 tablespoon kosher salt (Diamond Crystal; reduce to 2 teaspoons if using fine sea salt)
  • 1 teaspoon black pepper
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups apple cider (not apple cider vinegar)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar, packed
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, smashed
  • 1 medium yellow onion, sliced into thick rings
  • 8 to 10 soft hamburger buns or brioche buns (optional for serving)

  • Pickled jalapeños or banana peppers (optional for serving)

Instructions

  1. Trim the pork shoulder: Remove any large, thick pieces of fat, leaving a thin layer (about 1/4 inch). Pat the pork dry with paper towels.
  2. Mix the dry rub: In a small bowl, combine kosher salt, black pepper, smoked paprika, garlic powder, onion powder, chipotle chili powder, and dried thyme. Stir until evenly distributed.
  3. Season the pork: Rub the spice mixture all over the pork shoulder, massaging into every surface.
  4. Prepare the slow cooker: Place the sliced onion rings at the bottom of the slow cooker.
  5. Make the braising liquid: In a liquid measuring cup or small bowl, whisk together apple cider, apple cider vinegar, brown sugar, tomato paste, and Worcestershire sauce until the tomato paste is mostly dissolved. Drop in the smashed garlic cloves.
  6. Assemble everything: Place the seasoned pork shoulder on top of the onions. Pour the braising liquid around the pork (not directly over it). The liquid should come about halfway up the sides of the pork; add a little water or more cider if needed.
  7. Cook low and slow: Cover and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours. LOW is recommended for best tenderness.
  8. Check for doneness: After 8 hours on LOW, the pork should be fork-tender. Insert a fork into the thickest part and twist; if it shreds easily, it is done. If not, cook for another 30 to 60 minutes.
  9. Shred the pork: Using two forks, shred the pork directly in the slow cooker. Remove any large pieces of fat and discard. Stir the shredded meat into the cooking liquid.
  10. Thicken the sauce (optional but recommended): Remove the pork and onions with a slotted spoon. Set the slow cooker to HIGH and let the liquid simmer uncovered for 15 to 20 minutes until reduced by about a third. Return the pork to the pot and stir.
  11. Serve immediately or keep warm: The slow cooker will keep the pork warm on the WARM setting for up to 2 hours. If it starts to look dry, stir in a splash of apple cider or chicken broth.

Notes

For best results, cook on LOW. Let the pork rest in the liquid for 15-20 minutes before shredding. Skim excess fat before serving. The flavor deepens overnight.
