Upgrade instant ramen with a spicy, flavorful broth, a silky egg, and crunchy toppings in just 5 minutes. This budget-friendly recipe is perfect for late-night cravings or a quick, comforting meal.

Ingredients

Scale
  • 1 pack instant ramen noodles (discard seasoning packet)
  • 2 cups water
  • 1 tablespoon chili crisp (e.g., Lao Gan Ma)
  • 1 tablespoon soy sauce (low-sodium if desired)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder (or 1 clove fresh garlic, minced)
  • 1/2 teaspoon sugar
  • 1 large egg (room temperature preferred)
  • 1 scallion, thinly sliced (green parts or whole)
  • 1 teaspoon sesame seeds (toasted white or black)
  • 1 teaspoon butter (optional, for richness)
  • Pinch of red pepper flakes (for extra heat)

Instructions

  1. Mix the spicy sauce: In a small bowl, combine chili crisp, soy sauce, sesame oil, garlic powder, and sugar. Stir until smooth. Taste and adjust spice level if needed.
  2. Boil the water: Bring 2 cups of water to a rolling boil in a small pot.
  3. Cook the noodles: Add ramen noodles to boiling water, separating them with a fork. Cook for 2 minutes for a chewy texture or 2 minutes 30 seconds for softer noodles. Do not overcook.
  4. Add the egg: Crack the egg directly into the pot. Let it sit for 30 seconds, then gently swirl the water to create egg ribbons. Cook for 1 minute for a runny yolk or 1 minute 30 seconds for a firmer yolk.
  5. Add the sauce and butter: Pour the prepared spicy sauce into the pot. Add butter if using. Stir gently to combine, allowing the butter to melt and emulsify the broth.
  6. Pour into a bowl: Carefully transfer everything to a serving bowl. The broth should be slightly thickened.
  7. Add the toppings: Sprinkle sliced scallions, sesame seeds, and red pepper flakes over the top. Arrange for presentation.
  8. Serve immediately: Eat right away for the best texture, as noodles will continue to absorb the broth.

Notes

For best texture, use fresh ramen noodles if available. Don’t overcook noodles; they continue cooking after draining. Toast sesame seeds in a dry pan for 30 seconds for enhanced flavor. Layer heat by adding half the chili crisp to the sauce and saving the rest as a topping. Season the boiling water with a pinch of salt and a drop of soy sauce for more flavorful noodles.
