  • 8 ounces deli turkey slices
  • 8 ounces cream cheese, softened
  • 1 cup fresh baby spinach

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15-20 minutes or microwaving on low for 10-15 seconds.
  2. Lay one tortilla flat on a cutting board. If cold, warm in microwave for 10 seconds or in a dry skillet for 30 seconds per side.
  3. Spread a thin, even layer of cream cheese over the entire tortilla, leaving a 1/2-inch border around the edge.
  4. Season the cream cheese with a pinch of salt and black pepper. Add any optional seasonings or add-ins now.
  5. Place 3-4 slices of turkey flat on top of the cream cheese, overlapping slightly to cover the surface evenly.
  6. Scatter a handful of baby spinach leaves over the turkey in a single layer. Press down gently.
  7. Starting from one edge, roll the tortilla tightly toward the other edge, keeping the filling tucked in. Place seam-side down.
  8. Wrap the rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends to secure. Refrigerate for at least 30 minutes (1 hour is better, overnight is ideal).
  9. When ready to serve, unwrap the roll and place on a cutting board. Using a sharp knife, slice off the uneven ends, then slice the remaining roll into 1-inch pinwheels using a gentle sawing motion.
  10. Arrange the pinwheels in a lunchbox or serving plate. Store in an airtight container in the refrigerator for up to 3 days.
