  • 1/3 cup (65g) granulated sugar
  • 1 tablespoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 cup (120g) pumpkin puree
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar, sifted
  • 2 tablespoons pure maple syrup
  • 12 tablespoons heavy cream (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  4. In a small bowl, whisk together the pumpkin puree, heavy cream, and vanilla extract until smooth.
  5. Make a well in the center of the dry ingredients and pour in the wet mixture. Use a spatula or your hands to gently fold everything together until just combined. The dough will be shaggy and a little sticky.
  6. Turn the dough out onto a lightly floured surface. Gently bring it together into a disk about 1 inch thick. Use your hands, do not use a rolling pin.
  7. Use a bench scraper or a sharp knife to cut the disk into 8 equal wedges. Place the wedges on the prepared baking sheet, spacing them about 2 inches apart.
  8. Chill the scones in the freezer for 10 minutes.
  9. Bake for 14-16 minutes, or until the scones are golden brown on the bottom and lightly golden on top. Let them cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  10. While the scones are cooling, whisk together the powdered sugar, maple syrup, and 1 tablespoon of heavy cream in a small bowl. Add more cream, 1 teaspoon at a time, until the glaze is thick but pourable.
  11. Once the scones are completely cool, drizzle the glaze over the top. Let the glaze set for about 10 minutes before serving.

Notes

Keep all ingredients cold for flaky scones. Do not overmix the dough. Chill the shaped scones before baking for better rise. Let scones cool completely before glazing.
