Fresh Quinoa and Kale Power Bowls Easy Homemade Recipe with Lemon Tahini Dressing

Ingredients

  • 1 cup (170g) uncooked quinoa, rinsed well
  • 4 cups (120g) chopped kale leaves, stems removed
  • 3 tablespoons tahini
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 tablespoon olive oil (extra virgin, fruity)
  • 1 teaspoon maple syrup or honey
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • Water to thin dressing, as needed
  • 1/4 cup toasted sesame seeds
  • 1/2 cup shredded carrots
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced cucumber
  • Optional: 1/4 cup cooked chickpeas or roasted nuts
  • Pinch of sea salt for massaging kale

Instructions

  1. Rinse 1 cup quinoa under cold water until water runs clear. Combine with 2 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed and quinoa is fluffy. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
  2. While quinoa cooks, wash and dry kale thoroughly. Remove tough stems and chop leaves into bite-sized pieces. Place in a large bowl, sprinkle with a pinch of sea salt, and massage the leaves gently for 2–3 minutes until they soften and darken in color.
  3. In a small bowl or jar, whisk together 3 tablespoons tahini, 2 tablespoons fresh lemon juice, 1 tablespoon olive oil, 1 teaspoon maple syrup or honey, and minced garlic. Season with salt and pepper to taste. Add water, one tablespoon at a time, whisking until the dressing reaches a smooth, pourable consistency.
  4. Heat a dry skillet over medium heat. Add 1/4 cup sesame seeds and toast, stirring frequently, for about 2 minutes or until golden and fragrant. Remove from heat immediately to avoid burning.
  5. In the large bowl with kale, add the cooked quinoa, shredded carrots, cherry tomatoes, cucumber slices, and toasted sesame seeds. If using chickpeas or nuts, add them now. Drizzle the lemon tahini dressing over the top and toss gently to combine.
  6. Taste and adjust seasoning as needed. Serve immediately or chill for 10–15 minutes to let flavors meld.

Notes

Warm tahini slightly before mixing if thick or grainy for a smoother dressing. Massage kale with salt to soften and reduce bitterness but avoid over-massaging to prevent mushiness. Toast sesame seeds carefully to avoid burning. Keep dressing separate if storing to prevent sogginess.
