Game Day Crockpot Beer and Bean Football Chili

An easy 5-ingredient chili made in a slow cooker with ground beef, kidney beans, diced tomatoes, tomato sauce, and lager beer. Perfect for game day or any casual gathering.

  • 1 lb (450g) ground beef (80/20 preferred)
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 bottle or can (12 oz) lager beer (e.g., Budweiser, Coors, Corona)
  • 3 tablespoons chili seasoning mix
  • Salt and black pepper to taste
  • 1 small onion, diced (optional)
  • 2 cloves garlic, minced (optional)
  • Toppings: shredded cheddar, sour cream, green onions, jalapeños, crushed tortilla chips, avocado (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until no longer pink (6-8 minutes). If using onion and garlic, add them in the last 2 minutes. Drain excess fat, season with salt and pepper.
  2. Transfer the cooked beef (and onions/garlic if using) to the slow cooker.
  3. Add the drained and rinsed kidney beans, undrained diced tomatoes, and tomato sauce to the slow cooker. Stir to combine.
  4. Pour the entire bottle or can of lager beer into the slow cooker.
  5. Sprinkle the chili seasoning over the top and stir until evenly distributed.
  6. Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chili is thick and bubbly.
  7. Taste and adjust seasoning with salt and pepper as needed. If too thick, add a splash of beer or beef broth; if too thin, cook uncovered for 15-20 minutes.
  8. Serve hot with desired toppings.

Notes

For best flavor, use a light lager beer; avoid dark beers or IPAs. The chili improves after a day in the fridge. For a thicker chili, mash some beans against the pot. For a stovetop version, simmer on low for 45 minutes.
