  • 1 lb thin-cut bacon (e.g., Wright Brand or Oscar Mayer)
  • ½ cup packed brown sugar (light or dark)
  • 2 tablespoons maple syrup (real maple syrup, not pancake syrup)
  • 1 teaspoon Dijon mustard (e.g., Grey Poupon)
  • ½ teaspoon freshly ground black pepper
  • Toothpicks (soaked in water for 10 minutes)

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top if available.
  2. Cut each bacon strip in half crosswise to create pieces about 3-4 inches long.
  3. Wrap each little smokie with a piece of bacon, rolling tightly and securing with a soaked toothpick inserted at an angle.
  4. In a small bowl, combine brown sugar, maple syrup, Dijon mustard, and black pepper. Stir until smooth and thick.
  5. Brush or spoon the glaze generously over each bacon-wrapped smokie, coating all sides.
  6. Arrange the smokies seam-side down on the wire rack or directly on the foil, leaving space between each.
  7. Bake for 25-30 minutes, flipping halfway through (at 15 minutes) with tongs, until bacon is crispy and glaze is caramelized.
  8. Let rest for 5 minutes before serving to allow glaze to set.

Notes

Soak toothpicks in water for 10 minutes to prevent burning. Use thin-cut bacon for best results. If bacon isn’t crispy after 30 minutes, broil for 1-2 minutes, watching closely to avoid burning. For a spicier version, add ½ teaspoon cayenne pepper to the glaze.
