  • 1/4 teaspoon salt
  • For the Homemade Pumpkin Pie Spice Blend (optional): 2 tablespoons ground cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground nutmeg, 1/2 teaspoon ground cloves, 1/2 teaspoon ground allspice
  • For the Coffee Bar Station: Strong brewed coffee or espresso (about 1 cup per serving, medium or dark roast)
  • Milk of your choice (whole milk, oat milk, or almond milk)
  • Whipped cream (for topping)
  • Optional toppings: cinnamon sticks, star anise, pumpkin seeds, crushed graham crackers, caramel sauce, chocolate shavings

Instructions

  1. Make the Pumpkin Spice Syrup: Combine water and brown sugar in a small saucepan over medium heat. Whisk gently until sugar dissolves completely (2-3 minutes). The liquid should go from cloudy to clear.
  2. Add pumpkin puree, pumpkin pie spice, and salt. Whisk until fully incorporated and smooth.
  3. Bring mixture to a gentle simmer, then reduce heat to low. Cook for 8-10 minutes, stirring occasionally, until slightly thickened and color deepens to rich amber.
  4. Remove from heat and stir in vanilla extract. Let cool for 5 minutes in the saucepan.
  5. Strain syrup through a fine-mesh strainer into a glass jar, pressing on solids with the back of a spoon. Discard solids.
  6. Let syrup cool completely before sealing. Syrup can be used immediately or stored in the refrigerator for up to two weeks.
  7. Set Up the Coffee Bar Station: Brew a strong pot of coffee just before guests arrive (use about 2 tablespoons ground coffee per cup of water).
  8. Arrange serving tray with syrup in its jar, a small pitcher of warm milk, and a bowl of whipped cream. Place coffee carafe or thermos nearby.
  9. Set out toppings in small bowls (cinnamon sticks, star anise, toasted pumpkin seeds, crushed graham crackers).
  10. Add Halloween decorations: fake spiderwebs, plastic spiders, fake leaves, mini pumpkins, Halloween-themed napkins and stirring spoons.
  11. Provide serving instructions on a small card or chalkboard sign.
  12. Assemble the Drink: Add 2-3 tablespoons of pumpkin spice syrup to a mug.
  13. Fill mug about three-quarters full with hot coffee. Stir well to combine.
  14. Add a splash of warm milk (about 1/4 cup) and stir again.
  15. Top with whipped cream and choice of garnishes. Sprinkle pumpkin pie spice on top, add a cinnamon stick and star anise.
  16. Serve immediately while hot and whipped cream is still fluffy.

Notes

Do not boil the syrup vigorously; a gentle simmer is all you need. Strain the syrup while it is still warm to avoid clogging. Taste and adjust spices to your preference. Warm milk separately to keep the drink hot. Make the syrup ahead of time for best flavor; it keeps in the refrigerator for up to two weeks. Less is more with decorations; focus on a few well-placed items.
