Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini football-shaped pan with non-stick spray or melted butter.
  2. In a large bowl, whisk together melted butter and granulated sugar until well combined. Add eggs one at a time, whisking after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together cocoa powder, flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, folding gently with a rubber spatula until just combined. Do not overmix.
  4. Fill each football mold about 2/3 full using a small cookie scoop or tablespoon. Bake for 12-14 minutes, until a toothpick inserted in the center comes out with moist crumbs.

  6. For the frosting: In a medium bowl, beat softened butter and peanut butter until smooth. Gradually add sifted powdered sugar, then heavy cream and vanilla extract. Beat on medium-high for 2 minutes until light and fluffy. Adjust consistency with additional cream or powdered sugar if needed.
  7. Transfer frosting to a piping bag or zip-top bag with a small corner snipped off. Pipe a generous swirl onto each cooled brownie bite.
  8. Optional: Melt white candy melts or white chocolate in the microwave (20-second intervals). Transfer to a small piping bag and pipe two short lines across each frosted brownie bite to resemble football laces.
  9. Serve at room temperature. For a game-day presentation, arrange on a platter with green sprinkles or shredded coconut to mimic grass.
