Refreshing Watermelon Mint Spritzer for Labor Day

A crisp, hydrating non-alcoholic spritzer made with fresh watermelon, mint, and lime, perfect for Labor Day cookouts and summer gatherings.

  • 6 cups seedless watermelon, cubed (about 2 pounds)
  • ½ cup fresh mint leaves, packed
  • Fresh lime juice from 2 limes
  • 2 to 3 tablespoons honey or agave syrup
  • 3 cups sparkling water or club soda, chilled
  • Ice cubes
  • Fresh mint sprigs for garnish
  • Watermelon wedges or small triangles for garnish
  • Lime slices or wheels for garnish

Instructions

  1. Cut the watermelon into rough 1-inch cubes (about 6 cups). Remove any seeds. Place cubes on a baking sheet in a single layer and freeze for 20 minutes.
  2. Add the chilled watermelon cubes, packed mint leaves, fresh lime juice, and honey (or agave) to a blender. Blend on high for about 45 seconds until completely smooth.
  3. Let the mixture sit in the blender pitcher for 5 minutes to steep the mint.
  4. Place a fine-mesh strainer over a large bowl or pitcher. Pour the blended mixture through the strainer, pressing on solids with a spatula to extract as much liquid as possible. Discard pulp.
  5. Transfer the strained juice to the refrigerator and chill for at least 30 minutes (or 15 minutes in a metal bowl in the freezer, stirring once).
  6. When ready to serve, fill a large pitcher halfway with ice cubes. Pour the chilled watermelon-mint juice over the ice. Slowly add the sparkling water or club soda, pouring down the side of the pitcher to preserve bubbles. Stir gently.
  7. Garnish with fresh mint sprigs, thin watermelon wedges, and lime slices. Serve immediately in ice-filled glasses.

Notes

For best results, use cold ingredients from start to finish. The watermelon-mint juice can be made up to 24 hours in advance; add sparkling water just before serving. If watermelon is exceptionally sweet, you may omit the sweetener. For an adult version, add 1 to 1.5 cups of vodka, white rum, or gin.
