Ultimate Apple Dapple Cake with Easy Caramel Glaze Recipe

This incredibly moist apple cake is packed with tender apple pieces and warm spices, then topped with a silky caramel glaze. Made with simple pantry ingredients, it’s the perfect fall dessert that comes together in one bowl.

  • 2 cups granulated sugar
  • 1 cup vegetable oil (canola or avocado oil)
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3 cups peeled and chopped apples (about 3 medium apples, Granny Smith or Honeycrisp)
  • 1 cup chopped pecans or walnuts (optional)
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar (light or dark)
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan thoroughly with butter or cooking spray. Optionally line the bottom with parchment paper.
  2. Peel and chop apples into small cubes (about 1/4-inch pieces). Aim for 3 cups.
  3. If using nuts, toast them on a baking sheet in the preheating oven for 5-7 minutes until fragrant. Let cool.
  4. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. In a separate medium bowl, whisk together oil, sugar, eggs, and vanilla extract until smooth and slightly thickened, about 1 minute.
  6. Pour wet ingredients into dry ingredients and stir with a wooden spoon or rubber spatula until just combined. Do not overmix.
  7. Gently fold in chopped apples and toasted nuts. Batter will be very thick.
  8. Spread batter evenly into prepared pan. Bake for 40-45 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil for the last 10 minutes.
  9. Cool cake completely on a cooling rack, at least 30 minutes, before adding glaze.
  10. For the caramel glaze: Melt butter in a medium saucepan over medium heat. Add brown sugar and stir until smooth and bubbling, about 2-3 minutes.
  11. Slowly pour in evaporated milk while stirring constantly. Bring to a gentle boil and cook for 2-3 minutes, stirring constantly, until slightly thickened.
  12. Remove from heat and stir in vanilla extract and a pinch of salt. Let cool for about 5 minutes.
  13. Pour warm glaze over cooled cake and spread evenly. Let set for at least 15 minutes before slicing.

Notes

Granny Smith apples are preferred for their tartness. Room temperature eggs are important for proper batter consistency. Let cake cool completely before glazing to prevent glaze from soaking in. The cake actually tastes better the next day as flavors meld.
