Ingredients

  • 1 cup (100g) rolled oats
  • 2 tablespoons (14g) ground flaxseed (optional)
  • Pinch of salt
  • 1/2 cup (128g) creamy peanut butter
  • 1/3 cup (113g) honey
  • 1/2 teaspoon vanilla extract
  • 1/3 cup (60g) mini chocolate chips

Instructions

  1. In a large mixing bowl, combine rolled oats, ground flaxseed (if using), and a pinch of salt. Stir together.
  2. Add creamy peanut butter, honey, and vanilla extract. Stir until fully combined and no dry patches remain.
  3. Fold in mini chocolate chips until evenly distributed.
  4. If mixture is too sticky, refrigerate for 10-15 minutes.
  5. Using a 1-tablespoon cookie scoop or spoon, portion mixture and roll into balls. Place on a parchment-lined baking sheet.
  6. Refrigerate for at least 30 minutes until firm.
  7. Transfer to an airtight container. Store in refrigerator for up to 2 weeks or at room temperature for up to 5 days.

Notes

For best texture, chill for at least 30 minutes. If mixture is too dry, add a tablespoon of honey or peanut butter. If too wet, add a tablespoon of oats. Wet hands slightly to prevent sticking when rolling.
