  • 4 bone-in pork chops, about 1-inch thick
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle.
  2. In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme leaves, and finely chopped rosemary. Mix until evenly distributed. Set aside at room temperature.
  3. Pat the pork chops dry with paper towels to remove all surface moisture.
  4. Season both sides of each chop generously with salt and pepper.
  5. Heat a cast iron skillet or oven-safe frying pan over medium-high heat. Add olive oil and swirl to coat. Wait until the oil shimmers.
  6. Sear the pork chops for 2-3 minutes per side until deeply golden brown. Do not overcrowd the pan.
  7. Turn off the heat. Spread about 1 tablespoon of herb butter on top of each seared chop.
  8. Transfer the skillet to the preheated oven. Bake for 10-12 minutes for 1-inch thick bone-in chops.
  9. Check the internal temperature with a meat thermometer; it should read 145°F (63°C) in the thickest part, avoiding the bone.
  10. Remove from oven. Transfer pork chops to a cutting board or plate and tent loosely with aluminum foil. Let rest for 5 minutes.
  11. Spoon the garlic butter mixture from the skillet over the rested chops.
  12. Serve hot, drizzled with any remaining pan butter. Garnish with fresh parsley if desired.

For best results, let pork chops sit at room temperature for 20 minutes before cooking. Use a meat thermometer to ensure perfect doneness. If using boneless chops, reduce baking time by about 5 minutes. The herb butter can be made up to 3 days ahead and stored in the refrigerator.
